Abstract: The municipal markets have been studied in terms of issues of public health, compliance with hygiene standards during the handling of food, sources and causes of diseases that are transmitted through food products, among others. The objective of this study was to evaluate the compliance of good manipulation practices in the hornado of the Municipal Market of Alausí according to Standard NTE-INEN 2687: 2013 Healthy Markets through verification with a check list and microbiological analysis of samples taken from two places of sale. The results obtained from the checklist indicate the lack of knowledge of the traders on issues of BPM, BPH, BPA, PGIR, poor control and assurance of food safety, inadequate food preparation and poor hygiene of the manipulator, while the microbiological analysis carried out to the samples taken at the beginning and end of the sale allowed to identify that there is food contamination by Salmonella and E. Coli, due to improper practices during the sale and storage of the baking, affecting the sanitary quality of this dish that has great reception . Finally, a practical guide was drawn up aimed at those involved in the preparation and sale of hornado so that they acquire knowledge about good food manipulation practices.
